ABOUT THE CHOCOLATE from Soul Chocolate:
This chocolate is made using direct-trade cacao from the oldest farm in Huila, Colombia. The trees on this farm originate from the early 1800s and produce impossibly-rich cacao.
Ricardo Guzmán Álvarez emigrated with his two brothers from Spain to Colombia in 1820. Finding cacao growing naturally on his purchased plot of land, he did what anyone would do—he planted more.
This incredible family operation is Finca Casa Blanca; named for the original farmhouse on the property. The farm is now managed by Ricardo's great-great grandson, Reynaldo Guzmán Romero. Thanks to his care, the oldest trees on this beautiful property still produce high-quality beans to this day.
Bean-to-bar is the farm-to-table movement for chocolate— it's why Soul Chocolate sources their cacao beans directly from cacao farmers with whom they've established strong relationships. Back in Toronto they craft every bar themselves, roasting the raw beans and mixing the liquid chocolate. This single-origin approach showcases the pure and unique flavours of each cacao region, sharing the heritage and heart of their partner farms.
